This was planned to be a Special Recipe and I am so glad & grateful that it turned out to be one of the most special & delicious dishes I have ever made!
Special because of two reasons:
1. This was the first time I was making a Mutton dish for my parents! and they were expecting something really good so right from the word go I was a bit under pressure!
2. Also this was the first time Bandita was having Mutton after the birth of our son Abhay! and the last time she had Mutton was by far the most special mutton dishes she ever had! Her father made his special Mutton Curry on 10th January 2014; she had it for Lunch & Dinner and on 11th January 2014 Abhay was born! And I must say it was lip-smacking too! Hope Abhay turns out to be a Mutton lover just like his entire family!
The Curry reminded me of the Legendary Mutton Curry which was served at Moti Dhaba, Ghanta Ghar in North Delhi! and it felt great when my parents and Bandita said that they LOVED IT! all those 2.5 hours of preparation & cooking were worthwhile afterall!
So with all this at the back of my mind I started the preparations! Bought Raw Mutton from our favourite shop and asked for the most special meat with more meat and less bones which my parents prefer over bony meat!
And then it began....
Mutton - 1150 grams (No specific reason for this quantity; this is what I got!)
Mustard Oil - 1/2 cup
Sliced Onions - 5 medium sized
For The Masala Paste (combine all ingredients in a blender)
Onions - 3 small sized
Ginger - 4 tbsp
Garlic - 1 full pod
Green Chilies - 4
Whole Red Chilies - 10
Roasted Cumin Seeds - 2 tbsp
Roasted Coriander Seeds - 3 tsp
Turmeric - 1 tbsp
Green Cardamoms - 8
Curd - 5 tbsp
Ghee - 2 tbsp
Salt to taste
1. Wash the Mutton Pieces properly
2. Slice the Onions and keep them aside
4. Heat the Mustard Oil in a Big Non-Stick Pan
5. Add the sliced onions and fry till golden brown.
6. Now add the paste and mix well.
7. Bhunno this for atleast 15-20 minutes stirring continuously till oil separates from the masala.
8. Now add the Mutton and mix well.
9. Bhunno for 30-40 minutes. This is the most important and critical part about this recipe! The more patiently you Bhunno the meat the better it would get! Yes it gets tiring but then all this hardwork pays in the end!
10. Now add enough water for the mutton to cook in low to medium heat and keep the pan covered.
11. Once the mutton is tender adjust the seasoning and the gravy consistency.
12. Keep it simmering for 20-30 more minutes.
13. Serve it hot with Rotis and Plain Rice.
