Lemon Rice with a Ginger-Garlic Twist

Had a late & heavy breakfast today so decided to have a light lunch! Bandita made some boiled rice thinking I might get hungry (which I always am!) ; was watching a nice movie named Venus starring Peter O'Toole (http://en.wikipedia.org/wiki/Venus_(film)) and I don't know why an idea of making Lemon Rice came to my hungry (you see!) mind and off I went to the Kitchen!

Thought of improvising the easy recipe a bit by bringing some twist to it! and I am so glad the result was so delicious! and it made me really happy because it was the first time I was making Lemon Rice in whatever shape or size!

Here you go with the recipe...

Ingredients:

1. 2-3 bowls of  boiled White Rice
2. 2 tbsp chopped Garlic
3. 2 tbsp chopped Ginger
4. 6-8 Curry Leaves
5. 1 tbsp Turmeric Powder
6. 1 tsp Red Chilly Powder
7. 2 tbsp Channa Dal
8. 2 tbsp Urad Dal
9. 2 tbsp fresh Lemon Juice
10. 3 tbsp Refined Oil
11. 4 tbsp unsalted Peanuts
12. 3-4 Dry whole Red Chillies
13. Salt to taste
14. Mustard Seeds (I didn't use but can surely be added)

Method:

1. Heat the Oil and pop the Channa Dal, Urad Dal & the Peanuts
2. Once they are nice & brown add the chopped Ginger-Garlic, Haldi, Laal Mirch Powder & whole plus the Curry Leaves & saute for 2 minutes
3. Add the Rice and the salt
4. Sprinkle the lemon juice and let it cook for 3-4 minutes
5. The Twisted Lemon Rice is ready to eat!

Yeah it is that easy; won't take more than 10 minutes! and I am sure you would love the taste!

Matar-Bread ka Pulaao!

This is a Family Recipe if I can say so! I remember many years ago when we used to go to our Mausi-Mausaji's place in Etah, Uttar Pradesh our Mausi used to make this for breakfast; then Mummy learnt it as well and this became a regular Breakfast option for us! Easy & quick to make and very-very delicious!

When I landed here in Kuwait this became a part of my Breakfast Life here as well! Many call this Bread Upma; even though this isn't a Rice-based Pulaao I still call it Bread Pulaao to remember my childhood days!

Today while chatting with my friend - Mohaneesh Thapar he advised me to add some Green Peas as well and I did the same...it added a new flavour to this dish & made it more delicious...

The best accompaniment for this dish is Mango Shake and I made that too to make the combo complete! It adds weight to the breakfast you see & makes you ready for the weekend days ahead that's why I suggest you make this on the first day of your weekend ;)

Without any further adieu here is the easy recipe! This won't take more than 20 minutes including the preparation time! I guarantee a healthy, light and delicious Breakfast option to you all...

Ingredients:

1 Medium Onion
2 Medium Tomatoes
100 Grams Matar
2 tbsp Meat Masala Mix (I used Mehran)
1 tsp Turmeric
1 tsp Red Chilli Powder
1 tbsp Mustard Seeds
2 tbsp Refined Oil
6 Bread Pieces (I used the Multi Grain one)
Salt to Taste

Process:

1. Chop the Onions and Kaddoo-kas the Tomatoes
2. Boil the Peas, drain and let them dry off
3. Heat the Oil and crackle the Mustard Seeds
4. Bhunno the Pyaaz - once it is light brown add the Tomato Mix
5. Add the Meat Masala Mix and Bhunno till some oil comes on the top
6. Cut the bread into small squared and add them into the Masala Mix
7. Bhunno this entire combination for 5-6 minutes
8. Eat and Enjoy!

Please Note:
1. You can use Pav Bhaji or Tandoori Masala Mix, that too should suffice
2. White Bread makes this more delicious but Multi Grain Bread is the healthier option!
3. If you are the garnishing kind then you can sprinkle chopped fresh green coriander too!
