Yoghurt-Avocado Dip

I tasted Avocado for the first time after coming to Kuwait when we went to a Mexican resto here named Azteca in 2010 when I ate the famous Mexican Dip - Guacamole!

But today was the first time I made a recipe using Avocado at home and I am so happy it came out so well!

This was also the first time we were using the newly bought Philips Hand Blender which we purchased last weekend!



This dip is very healthy, quick to make, very delicious and a perfect accompaniment for Bread or even Rotis!

Here you go with the "easy" recipe!

Ingredients:

1⁄2 cup skimmed milk hung curd
1 ripe avocado - chopped
2 cloves garlic - minced
3 tablespoon fresh coriander leaves - finely chopped
1 tablespoon seeded jalapeno pepper - finely chopped
2 tablespoon fresh lime juice
Salt and ground black pepper as per taste



Method:

1. Place the hung curd, avocados, garlic, fresh coriander leaves, lime juice in a hand blender jar and give it a whip for 1-2 minutes.
2. Mix until smooth and check for the seasoning  .
3. Place in a serving bowl and serve with bread or roti.
4. Thank me later

Baked Salmon


Salmon has always been one of favourite Fish variety but I never made any recipe at home...always had it at a Restaurant only. No specific reason for it, it's just that I never thought of giving it a shot!

But it all changed this weekend; we went for our monthly Grocery shopping at Lulu Hypermarket and I saw some fresh Salmon fillets wrapped & packed so I picked one up! The Fillet was some 400 odd grams...

And the same evening decided to give it a shot! and a new tryst began!

And this is the recipe I picked up from the Internet! A wildly popular recipe - you see I didn't want to go wrong as this was my very first time! This has a whopping 1756 reviews! The risk was going to be very low!

And I was so happy that the recipe came out so well! Now this would be a regular at my home for sure! My wife also loved it! Nutritious, Flavourful, Easy to Make and damn Delicious!

Ingredients:

1 Fresh Salmon Fillet
3 cloves garlic, minced
2 tablespoons light olive oil
2 teaspoons dried basil
1 teaspoon salt
2 teaspoons ground black pepper
1 tablespoon lemon juice
1 tablespoon chopped fresh coriander

Method:

1. Prepare the marinade by mixing garlic, olive oil, basil, salt, pepper, lemon juice and chopped fresh coriander. And bring the Fillet out (This isn't my priginal photograph; picked it up from the Internet) Source: http://chicagoprimemeats.com/fresh-wild-coho-salmon-fillets.html



2. Coat the salmon fillet with the marinade and put the fillet in the refrigerator for about 1 hour.



3. Preheat the oven to 190 degrees C.

4. Wrap the fillet in aluminium foil, cover with marinade, and seal.



5. Place the sealed salmon in a baking pan and bake for 35 to 45 minutes, until easily flaked with a fork.




6. Serve the Fillet with all the juices!

7. Enjoy it with Flavoured Rice or just like that!

Chicken Ghee Roast



It has always been my endeavour to keep exploring new Indian recipes each time I venture into the kitchen and this was another glorious attempt which came out so successfully in the end!

Saw this recipe first on Sikandalous Cuisine FB Page where it was posted by Dr. Rajeev Nandagopal and in turn who had picked it up from the Sailu's Food Blog (http://www.sailusfood.com/2012/12/27/chicken-ghee-roast-mangalore-recipe/)

The look and the feel of this dish was more than inviting and the colours simply invigorating! so it had to be made without any further delay!

The subtle mix of Red Chillies, all the other spices, Jaggery and Tamarind combine together to give a surreal flavour to this dish and one which I had never sampled before!

Here you go...

Ingredients:

850 gms chicken
150 gms curd
Juice of 1 medium lemon
Turmeric powder - 1 tsp
Jaggery - 2 tbsps
Ghee - 4 tbsps
Dry Whole Red chillies - 15 (the real spicy ones)
Black Pepper corns - 1 tbsp
Cloves - 8
Garlic - 20 slivers
Fenugreek seeds - 1 tsp
Coriander seeds - 2 tbsp
Cumin seeds - 1 tbsp
Tamarind paste - 2 tbsp
Curry leaves - lots & lots
Salt to taste

Method:

1. Dry Roast the chillies in a non-stick pan and let them cool.



2. In the same pan heat some ghee and roast the peppercorns,cloves,Fenugreek,Cumin and Coriander seeds.



3. Make a fine paste from both of the above, the garlic, Tamarind paste and a little water. (And believe me the aroma & the colour is so awesome that it hits you like nothing else, smell it to enjoy the magic)



4. Whip the curd, add lemon juice, salt, turmeric powder and the paste and marinate the chicken in this mix overnight (I marinated it almost for 24 hours)

5. Heat the ghee,add few curry leaves and then put the Chicken with the entire marinade and cook on high heat for 10-15 minutes. And let the aroma overtake you!



6. Reduce the flame and let the chicken cook for 35-40 minutes and don't forget to close the lid.



7. Add the Jaggery mixed in some water (depending on the curry consistency you want) and simmer till almost done.

8. Take a bunch of curry leaves and rub them in the palms of your hand, add them to the chicken and simmer for 5-10 minutes.

9. Revel in the colours of the gravy and the delightful fragrance to build up your appetite!

10. Enjoy the CGR with Paranthas/Rotis/Steamed Rice.

Lemon Rice with a Ginger-Garlic Twist



Had a late & heavy breakfast today so decided to have a light lunch! Bandita made some boiled rice thinking I might get hungry (which I always am!) ; was watching a nice movie named Venus starring Peter O'Toole (http://en.wikipedia.org/wiki/Venus_(film)) and I don't know why an idea of making Lemon Rice came to my hungry (you see!) mind and off I went to the Kitchen!

Thought of improvising the easy recipe a bit by bringing some twist to it! and I am so glad the result was so delicious! and it made me really happy because it was the first time I was making Lemon Rice in whatever shape or size!

Here you go with the recipe...

Ingredients: 

1. 2-3 bowls of  boiled White Rice
2. 2 tbsp chopped Garlic
3. 2 tbsp chopped Ginger
4. 6-8 Curry Leaves
5. 1 tbsp Turmeric Powder
6. 1 tsp Red Chilly Powder
7. 2 tbsp Channa Dal
8. 2 tbsp Urad Dal
9. 2 tbsp fresh Lemon Juice
10. 3 tbsp Refined Oil
11. 4 tbsp unsalted Peanuts
12. 3-4 Dry whole Red Chillies
13. Salt to taste
14. Mustard Seeds (I didn't use but can surely be added)

Method:

1. Heat the Oil and pop the Channa Dal, Urad Dal & the Peanuts
2. Once they are nice & brown add the chopped Ginger-Garlic, Haldi, Laal Mirch Powder & whole plus the Curry Leaves & saute for 2 minutes
3. Add the Rice and the salt
4. Sprinkle the lemon juice and let it cook for 3-4 minutes
5. The Twisted Lemon Rice is ready to eat!

Yeah it is that easy; won't take more than 10 minutes! and I am sure you would love the taste!
