From now on would be trying one such option every weekend for sure....makes the mornings interesting in a different way!
Started this tryst with Corn-Cheese Sandwich! inspired by Dipti Sharad from FB's community "Ghar ka Khana" and her recipe: http://indianrecipes4you.com/appetizers/corn-sandwich/
Here you go...this makes 4 sandwiches and we used Whole Grain Bread....
Ingredients
100 grams frozen corn kernels, boiled and blanched
1/2 medium size Onion - chopped
40 grams Capsicum - chopped
1 tbsp black pepper, freshly crushed
½ tbsp red chili flakes
2 tbspgrated mozarella or cheddar cheese
3 tsp butter
1 garlic clove - minced
1 tbsp basil seasoning
Salt to taste
Method:
Boil the corn kernels in a pan
Heat the butter in the frying pan.
Add the garlic and Saute for 15-20 seconds.Add Onion and saute for 2 mins. Add Capsicum and saute for 2 mins
Add the corn kernels and stir.
Stir for 1-2 minutes on low flame.
Season with salt, pepper and red chili flakes.
Add the mozarella or cheddar cheese, when the corn filling mixture has become warm.
Stuff this corn-Onion-capsicum filling in the bread and toast them .
Serve hot with any sauce of your liking (I had this with Peri Peri Garlic Sauce - Medium)
And the next time we would definitely use Cream Cheese to add a different sort of consistency...
