Murgh Badam-e-Saunfi




Had planned a House Party on Friday 20-Sep-2013 for my Happy Bidday Celebrations and thought of trying a new Chicken Dish...went through the Internet and found this one : http://www.journeykitchen.com/2010/06/murgh-masala-chicken-masala.html

Decided to make this; the colour looked so awesome & inviting! and it came out really very good....here you go with the recipe

Ingredients:

2.5 Kg Chicken cut into small-medium pieces
40 almonds
2 cup yoghurt
2 tbsp turmeric
2 tbsp red chilly powder
4 tbsp coriander seeds
6 tbsp Saunf aka Fennel Seeds
4 tsp Cumin seeds
5 green chillies
8 green cardamom pods
5 red onions (finely chopped)
5 tomatoes (small and ripe, chopped)
4 tbsp Ginger Garlic Paste
6 tbsp Sarson (Mustard) Oil
Coriander to garnish

Method:

1. Marinate the chicken overnight in yoghurt, red chilly powder, turmeric, GG paste, green chillies and salt.



2. Now the Most Important ingredient of this dish: Make a fine powder of the Almonds, coriander seeds, cumin seeds, cardamom pods and fennel seeds



3. Heat the Mustard oil in a saucepan. Add the chopped onions and saute till they are on their way to getting golden but not dark brown. and then add the almond spice mix and let the aromas take over you and your kitchen! Bhunno for 10-12 minutes




4. Add the chopped tomatoes and bhunno till the oil comes out and the fragrance gets over you!

5. Add the marinated chicken along with the marinate. Cover and cook for 25 minutes at low heat. Add water as per your gravy choice.


6. Keep checking & stirring...cover the pan and simmer on low heat till the oil comes on top...

7. And then it is ready! the Blazing Orange colour looks so awesome! the colour of this season...no wonder my wardrobe has been oranged too!



8. Garnish with Fresh Coriander and ATTACK!

Mozzarella-Bell Peppers Sandwich



Sandwich is one of the most customizable food items I say! one can make innumerable fillings and then toast it, grill it or even roast it! and that's what I like about them....

This time I took an inspiration from Radha Natarajan's recipe which looked so colourful and delicious plus it had my favourite Mozzarella Cheese so I had to give it a try! didn't wait for much long as always!

Here you go with the Recipe:

Ingredients:

Multi Grain Bread (You can use any variety)
4 tbsp Mozzarella Cheese
1 tbsp Oregano Flakes
1 tsp Red Chilli Flakes
1 tsp Black Pepper Powder
Salt as per taste
1/2 Yellow Bell Pepper
1/2 Red Bell Pepper
1/2 Tomato
1 Spring Onion
Chopped Green Coriander
Oil

Method:

1. Slice the tomato & bell peppers plus chop the spring onion

2. Brush a non-stick pan with some oil and toast the Bell Peppers, Tomatoes and Spring Onion plus sprinkle the Oregano, Chilli Flakes, Black Pepper Powder and salt

3. Spread this toasted filling plus the Mozzarella Cheese & Coriander onto the Bread

4. Toast the breads in a Sandwich Toaster

5. Serve the sandwiches with Chilli Sauce!

Pallipalayam Chicken



 Pallipalayam Chicken!

a Tamil Nadu delicacy made in Kuwait by a Bihari born & brought up in Delhi! well that's Diversity :D

Since the last couple of months have been diversifying & experimenting with a lot of new dishes both Vegetarian & Non Vegetarian...Wanted to try some Chicken Delicacy from South India as well and luckily few days back my eyes fell upon this delicious-looking dish named Pallipalayam Chicken!

Pallipalayam is a panchayat town in Namakkal district in the Indian state of Tamil Nadu and it's claim to fame is this dish! It is very easy to make and has 2 ingredients which I had never tried before in my cooking - Coconut Slivers & Shallots! 2 more reasons to give this dish a try!

Here you go with the recipe:

Ingredients:

750 gms chicken with bone
Shallots-20 sliced
Red chillies-10 broken into 2
Garlic-30 cloves each clove sliced into 2
Curry leaves-lots
Coriander-2 sprigs chopped up with stems
Coconut slivers-10
Turmeric powder-2 tsp
Mustard-1 tbsp
Urad dal-1 tbsp
Oil
Garam Masala-1 tbsp
Salt to taste
Water







Method:

1. In a kadhai, heat the oil, splutter the mustard seeds and Urad dal.

2. Add the coconut slivers and curry leaves and stir them around for a minute.

3. Add the Garlic and saute till it browns.

4. Add the shallots,red chillies,turmeric and saute well.



5. Once the Shallots go limp,add the Chicken and Salt and give a good stir.



6. Brown the chicken and let it cook covered in its own juices.



7. Cook covered on a low flame and add some water.

8. When 80% done,add the Garam masala and the chopped Coriander and simmer away till done.

9. Eat this with hot Tawa Rotis!
